Description

Yeopo's Dream Red (Dry) is a 12% ABV dry red from Yeopo Wine Farm in Chungcheongbuk-do, using 100% Korean-grown grapes and classified as cheongju. Where the sweet sibling emphasizes fruit generosity, this dry expression reveals the structural side of the same vineyard - the tannin, the acidity, the savory undertow that sugar usually conceals. The nose is more restrained: dried red berry, a touch of dried herb, and a faint earthy quality. On the palate, the body is medium-light with a notably clean, polished texture. The dryness is convincing - there is no residual sweetness lurking, just a steady line of grape acidity and a firm tannic spine that gives shape to the midpalate. The finish is clean and moderately long, drying gently. Silver medalist at the 2014 Korea Wine Awards, and the brewery holds a 2019 Visiting Brewery designation. Serve at 12-15°C alongside hanjeongsik where the composed dryness suits multi-course pacing, with grilled fish where the tannin provides quiet structure, or with steamed dishes where the clean acidity refreshes the palate between bites.
