Yeju is a 15% ABV cheongju from Yongdusan Joeun Sul Brewery in Chungcheongbuk-do, built around bokbunja (Korean black raspberry) with distilled spirit, yeast, and purified water. Despite its clear, polished cheongju classification, the bokbunja base gives this wine a depth that challenges expectations — it looks composed and restrained but carries a dark-berry complexity underneath. The nose opens with blackberry compote and a faint floral lift, followed by a clean spirit warmth. On the palate, the body is medium-full with a smooth, satin-like texture. The 15% ABV provides structural backbone without harshness, and the bokbunja character emerges as a persistent dark-fruit undercurrent through the midpalate — not jammy or sweet-forward, but dry and berry-inflected. The finish is long and disciplined, gradually drying with a faint tannic edge. Serve at 12-15°C with hanjeongsik where the composed arc suits formal courses, alongside grilled fish where the berry note adds quiet depth to clean flavors, or with steamed dishes where the satin body absorbs savory moisture.
