Despite its clear, polished cheongju classification, the bokbunja base gives this wine a depth that challenges expectations — it looks composed and restrained but carries a dark-berry complexity underneath. The nose opens with blackberry compote and a faint floral lift, followed by a clean spirit warmth. On the palate, the body is medium-full with a smooth, satin-like texture. The 15% ABV provides structural backbone without harshness, and the bokbunja character emerges as a persistent dark-fruit undercurrent through the midpalate — not jammy or sweet-forward, but dry and berry-inflected. Sobaeksan Fresh Makgeolli is a 6% ABV unfiltered rice wine from Chungcheongbuk-do's Yongdusanjoeunsul Brewery. The grain bill combines rice, wheat flour, and Pyeonghwami (a Korean rice variety), creating a creamy, mildly sweet profile with a soft milky body. At just 6%, it drinks bright and easy, with enough grain character to feel substantive without any heaviness. The "fresh" (saeng) designation indicates it is unpasteurized, preserving live cultures and a natural effervescence.
