Mowol In is a 41% ABV distilled spirit from Gangwon-do, built from domestic rice, purified water, and wheat nuruk. The use of wheat nuruk rather than the more common rice nuruk shifts the fermentation character - wheat nuruk tends to produce a slightly earthier, more aromatic base with different ester profiles than rice-based starters. At 41%, this is a serious spirit that rewards attention. The nose opens with warm toasted grain, a distinctive wheat-bread quality from the nuruk, a subtle honey note, and a clean earthiness. On the palate, the body is medium-full with a smooth, slightly viscous texture. The rice provides a familiar warm, sweet backbone, while the wheat nuruk introduces its own personality - an aromatic, slightly yeasty depth with more complexity than standard ipguk fermentation would deliver. There is a pleasant savory quality in the mid-palate that adds dimension. The alcohol integrates well, providing warmth without harsh edges.
