Keopinyak is a 40% ABV coffee-based distilled spirit from Jeju-do, crafted from green coffee beans with sugar, yeast, purified water, and chlorogenic acid. Where Keopi Wine Toksi takes the fermentation-only path at low proof, Keopinyak pushes into distillation territory at serious strength. The result is a spirit where coffee character is concentrated and transformed through heat. The nose is striking — roasted coffee with a spirit-driven intensity, dark chocolate, a faint caramel sweetness from the sugar base, and an unexpected citrus brightness likely from the chlorogenic acid. On the palate, the body is medium-full with a smooth, slightly oily texture. The coffee dominates assertively — bitter, roasted, and deep — but distillation has refined it, removing raw harshness and leaving concentrated essence. The sugar base provides a rounded sweetness that prevents the bitterness from becoming austere. Mid-palate reveals dark cocoa and a warm, brandy-like richness.
