Keopi Wine Toksi is an 11% ABV fruit wine from Jeju-do built on fermented green coffee bean extract, occupying a rare intersection between coffee culture and Korean winemaking. Rather than simply adding coffee flavor to wine, the production ferments the green coffee beans themselves, creating a profile where coffee aromatics emerge through fermentation rather than infusion. The nose is unusual and captivating — green coffee bean earthiness, a subtle fruit-wine acidity, and a faint chocolate-like sweetness that hints at the bean's origin. On the palate, the body is light-medium with a smooth, slightly viscous texture. The coffee character is present but restrained, showing more as a roasted undertone than a bold espresso note. There is a pleasant fermentation-derived tartness that keeps the wine lively, preventing it from becoming heavy or syrupy. The mid-palate reveals a brief cocoa bitterness and a clean, green-bean vegetal note. The finish is moderate with a dry coffee-ground aftertaste and gentle fruit-wine warmth.
