Daetongju

Description

Daetongju is an 11% ABV fruit-style brew from Chuseonggoeul Brewery in Jeollanam-do, layering domestic plum concentrate and bamboo leaves over a rice base. The plum concentrate drives the flavor profile — it introduces a tart, juicy plum character that dominates the midpalate, while the bamboo leaves add a subtle green, herbaceous freshness that keeps the sweetness from becoming one-note. The nose is immediately fruity: ripe plum, a hint of green bamboo, and a faint floral edge. On the palate, the body is light-medium and refreshing, with the fruit-forward sweetness balanced by the bamboo's vegetal crispness and a gentle acidity. Winner of the 2012 Korea Traditional Liquor Awards Grand Prize (yakju/cheongju) plus 2013 SIWC, IWSC, and NYWSC bronze medals. Serve well chilled at 5-8°C with hoe where the plum brightness complements the soy-sesame dip, or as an aperitif with light cheese and crackers.
