Chuseongju is a 25% ABV herbal spirit from Jeollanam-do that combines Korean rice with domestic medicinal herbs in a recipe anchored by the Korean Food Master designation and a 2014 Find-a-Brewery certification. The herbal component is present but measured - this is not a medicinal tonic but a spirit that uses botanicals to add depth to a clean rice base. The nose opens with gentle rice clarity, followed by a subtle herbal complexity - earthy, slightly woody, with a faint sweetness that suggests licorice root or dried jujube rather than sharp green herbs. On the palate, the body is light-medium with a smooth, composed texture.
