Description

Daeipsul is a 12% ABV cheongju from Jeollanam-do that reads like a herbal encyclopedia: rice and nuruk form the base, while bamboo leaf, pine needle, citrus peel (jinpi), arrowroot (galgeun), omija (schisandra), gugija (goji berry), and bamboo sap (jungnyeok) create a complex botanical overlay. At 12%, this is a gentle, wine-strength beverage designed for easy drinking with layered herbal complexity. The nose is immediately green and aromatic — fresh bamboo leaf, pine resin, citrus zest, and a sweet-tart omija note that ties the botanicals together. On the palate, the body is light with a clean, refreshing texture. The rice base provides a soft, neutral canvas that allows each botanical to contribute: bamboo leaf's clean green bitterness, pine needle's resinous freshness, omija's distinctive five-flavor profile (sweet, sour, salty, bitter, pungent), and goji's subtle dried-fruit sweetness.
