Daeipsul is a 12% ABV cheongju from Jeollanam-do that reads like a herbal encyclopedia: rice and nuruk form the base, while bamboo leaf, pine needle, citrus peel (jinpi), arrowroot (galgeun), omija (schisandra), gugija (goji berry), and bamboo sap (jungnyeok) create a complex botanical overlay. The nose is immediately green and aromatic - fresh bamboo leaf, pine resin, citrus zest, and a sweet-tart omija tone that ties the botanicals together.
