Jeju Monsun Coffee Ju is an 11% ABV specialty from Jeju Island that ferments green (unroasted) coffee beans with water, sugar, and yeast, producing a distinctly different aromatic profile from conventional roasted-coffee liqueurs. Because the beans bypass roasting, the volatile compounds lean toward bright, grassy, and subtly floral notes rather than the caramelized bitterness typical of dark-roast extracts. The sugar and yeast fermentation creates a lightly effervescent, semi-dry body that carries the green-bean character without heavy sweetness.
