Byeolgeurian Choseol Persimmon is a 40% ABV craft spirit from Baekrok Brewing on Jeju Island, distilled from Jeju citrus with a dry yeast fermentation. The high proof delivers genuine intensity, yet the finish is remarkably smooth and focused rather than hot. The citrus character carries through from nose to palate, providing a bright, fruit-forward edge that distinguishes it from grain-only soju.
