Jejusulikneunjip Gosorisul is a 40% ABV gosori-style spirit from Jeju-do, preserving the island's traditional distillation method where mixed grains — including rice — are fermented with nuruk and water before pot distillation through a gosori (traditional Jeju still). The Korea Food Master designation and 2018 Find-a-Brewery recognition are not mere decorations; they reflect a production philosophy rooted in heritage. The nose opens with a warm, savory grain character — not the clean neutrality of column-distilled spirits, but a rounded, almost porridge-like richness that signals pot distillation. A subtle fermentation funk from the nuruk adds depth, accompanied by a mineral cleanness from Jeju's volcanic water. On the palate, the body is medium-full with a rounded, coating texture. The grain sweetness is gentle and savory, leaning toward cooked rice rather than sugar, with nuruk-derived umami providing quiet backbone. The mid-palate shows a faint nuttiness and a clean, lightly tannic bitterness that provides structure. The finish is moderately long, warm, and savory, closing with grain sweetness and volcanic mineral dryness.
