Description
Doksuri Makgeolli is a 6% ABV makgeolli from Daejeon, produced by Sintanjin Brewery using domestic rice with both baekguk and hwangguk koji starters plus yeast. The dual-koji approach sets it apart from single-starter makgeolli, layering distinct fermentation dimensions: baekguk contributes citric brightness while hwangguk adds umami-rich depth. The resulting texture is creamy and plush, with a rounded sweetness that avoids one-dimensional sugariness. Serve it slightly chilled with crispy jeon, fried chicken, or kimchi-forward dishes where a mellow, complex makgeolli can act as a comforting counterpoint.
