
산막생대덕주
Sanmak Fresh Daedeokju is a 13% ABV brew from Sintanjin Brewery in Daejeon, made with domestic glutinous rice and nuruk in a straightforward recipe that places all emphasis on grain quality and fermentation control. The glutinous rice delivers a naturally rounded, slightly viscous mouthfeel that distinguishes this from standard non-glutinous rice brews. The nose is gentle and cereal-forward, with steamed sticky rice and a faint yogurt-like tang from the nuruk. On the palate, the body is medium with a soft, cushioning texture — the grain sweetness is present but restrained, balanced by a clean acidity that keeps the profile from becoming heavy. The finish is smooth and moderate, with a lingering grain warmth. Winner of the 2011 Korea Traditional Liquor Awards Excellence Prize in the yakcheongju category. Serve at 10-13°C with grilled meats where the rounded body absorbs char and fat, alongside hoe where its neutral cleanliness lets the fish shine, or with a full banchan spread where the smooth grain center ties disparate flavors together.
