Dansangjigyo is a 16% ABV traditional brew from Daejeon, where Sintanjin Brewery ferments a blend of rice and glutinous rice using both nuruk and starter culture (jongguk). The dual-fermentation approach creates a layered profile that reads as polished rather than rustic — the nuruk contributes earthy depth while the starter culture brings cleaner, more controlled sweetness. At this proof, the body carries notable weight without becoming sluggish, and the finish settles into a calm equilibrium that invites steady sipping throughout a meal.
