Dalmak is a 13% ABV traditional brew from Gwangju, produced by Wol Gwangjujo Brewery using domestic rice, guk starter, yeast, and acidity regulator. At 13%, it carries substantially more weight than session-style makgeolli, positioning itself between everyday comfort and serious craft territory. The acidity regulator helps maintain a balanced, composed profile where grain sweetness does not overwhelm.
