Ilyeop Pyeonju is a 12% ABV traditional Korean alcohol from Nongamjongtaek Brewery in Gyeongsangbuk-do, crafted from a mix of glutinous and non-glutinous domestic rice with wheat-containing nuruk. Classified outside the standard makgeolli/cheongju categories, it occupies a distinctive middle ground with a smooth, centered palate where neither sweetness nor acidity dominates. The wheat nuruk fermentation adds a subtle, layered depth beneath the clean grain surface, and the 750ml format encourages pairing across a full Korean meal.
