Daeipsul is a 12% ABV cheongju from Jeollanam-do, crafted by Chuseonggoeul Brewery with an unusually broad botanical palette — bamboo leaf extract (jukyeok), bamboo leaf, omija (five-flavor berry), goji berry, citrus peel, kudzu root, cinnamon, and pine needles join a base of Korean rice and nuruk. The result is a clear rice wine where herbal complexity unfolds in stages: piney freshness first, then warm spice, then a lingering berry-tinged finish. At 300ml, it is a focused bottle that rewards pairing with grilled fish, steamed dishes, or refined hanjeongsik courses where the botanical precision complements rather than overwhelms delicate ingredients.
