Odaeseoju Brewing in Gangwon-do returns with another highland-agriculture expression, this time pairing domestic white rice with domestic potato in a 13% clear wine. Where the brewery's 16% Seoju leans bold, this lower-proof version emphasizes elegance and drinkability. The potato's contribution is subtle but essential: a smooth, starchy mouthfeel that gives the mid-palate a pillowy quality rarely found in pure rice cheongju. The nose carries clean grain and a faint mushroom-like earthiness from the potato. The finish is quick and refreshing, with a whisper of mineral. The 700ml bottle is generous for table sharing. Pair it with memil-guksu (buckwheat noodles in cold broth) where the chilled, clean flavors align, or with hwangtae-gui (grilled dried pollack) where the smoky fish and the potato-starch smoothness create a satisfying combination.
