Odaeseoju Brewing in Gangwon-do blends domestic white rice with domestic potato, creating a 16% brew with an identity distinctly tied to the province's highland agriculture. The potato doesn't announce itself loudly; instead, it weaves an earthy, starchy depth beneath the rice's cleaner top notes, like a root cellar scent folded into grain warmth. On the palate, the body is medium-full with a smooth, slightly waxy texture that carries both sweet and savory tones without letting either dominate. The finish is moderate in length, resolving with a gentle potato-starch dryness that's unusual and compelling. Serve at 12-14°C alongside dakgalbi, where the spicy-sweet chicken needs a drink with structure to stand its ground, or with gamja-tang (pork bone and potato stew) for an echo of potato-meets-grain harmony.
