Hwajeon Ilchwi 15 is a 15% ABV traditional drink from Jisiul Brewery in Gangwon-do, brewed with domestic glutinous rice, non-glutinous rice, and traditional nuruk made from Korean wheat. The wheat-based nuruk is the defining element — it introduces a grounded, almost toasty grain character that adds depth beneath the smooth surface. At 15%, the body carries a fuller weight than light session drinks, giving it presence and warmth that matches hearty Korean fare. The dual-rice base of glutinous and non-glutinous rice provides both sweetness and structure, while the traditional nuruk contributes a complexity that commercial enzyme starters cannot replicate.
