Iljichun is a 15% ABV cheongju from Nogeum Brewing in Gangwon-do, built on Cheorwon Odae rice — a cold-climate variety prized for clean, precise grain character — with a small addition of glutinous rice for textural roundness. Nuruk made from domestic wheat handles the fermentation, and the result is a cheongju that feels centered and defined: smooth, clean, and dry-leaning without thinness. The Cheorwon provenance matters here, as the mineral-rich Gangwon terroir gives the rice a crispness that translates directly into the final product. At 375ml, this is a contemplative pour intended for restrained Korean cuisine where the drink steps back and lets delicate food flavors stay in focus.
