Description

Osan Brewing's Omaebaekju is a 12% ABV takju that occupies a middle ground between everyday makgeolli and the heavier, almost wine-like traditional brews. Made from domestic rice, guk starter, yeast, and purified water, it follows a classic minimal recipe but ferments longer to reach its higher strength. The aroma opens with concentrated cooked rice and a hint of overripe banana - a byproduct of extended yeast activity. On the palate, the first sip is noticeably denser than a standard 6% pour: the rice sweetness tastes more concentrated, almost like nurungji (scorched rice) broth, and the body has a weighty, coating quality. Midpalate warmth from the alcohol starts to build, and the finish extends with a gentle, bread-like yeastiness. It drinks best at 10-12°C in smaller pours - a 500ml bottle shared between two feels about right. Pair it with buchimgae (savory pancakes) loaded with kimchi, where the fat and fermented tang need a drink with backbone. It also holds up well against doenjang jjigae, matching the earthy soybean paste with its own grain depth.
