The onion doesn't read as savory on the nose; instead, it manifests as a subtle caramelized sweetness, almost like slow-roasted allium folded into grain warmth. Corn starch smooths the texture to a near-silky consistency. On the palate, the body is light and flowing, with a gentle umami undercurrent that distinguishes it from purely grain-driven cheongju. The finish is clean and quick, with a mineral whisper.
