Sahwajeongmiso is a 12% ABV makgeolli from Gyeongsangnam-do's Upouiachim Brewery, built on a rich grain foundation of glutinous rice, regular rice, rice ipguk, and nuruk. This multi-grain, multi-starter approach produces a denser, more layered cereal sweetness than standard makgeolli, with the ipguk adding an extra dimension of enzymatic conversion depth. At 12%, it drinks with a fuller, more vinous weight that places it closer to a light wine than typical 6% commercial makgeolli. The creamy texture is substantial without being heavy, creating a satisfying middle ground between casual sipping and contemplative tasting.
