Joseon Jujosa is a 14% ABV traditional drink from Gyeongsangnam-do, produced by Upo-ui Achim Brewery using rice, ipguk (cultured rice koji), nuruk, distilled spirit, and purified water. The dual-fermentation approach — combining ipguk and nuruk — builds layered complexity that neither starter achieves alone, while a small addition of distilled spirit adjusts the final proof. At 700ml and 14%, it is positioned as a versatile table wine that prioritizes balance and harmony over any single dramatic flavor note.
