Description

Iyeon 56 is a 56% ABV sorghum-based spirit from Chungcheongbuk-do, distilled from sorghum, nuruk, yeast, and purified water. Sorghum is an uncommon base grain for Korean spirits, and its use here produces a distinctive character — the earthy, slightly bitter intensity of the grain carries through the high proof with remarkable clarity. Careful nuruk fermentation and distillation produce a spirit that feels bold and commanding yet maintains a surprisingly clean finish. A few drops of water open up hidden grain sweetness that makes it compelling alongside rich Korean multi-course meals.
