Description
The 9% sibling from Dokkaebi Brewery in Danyang keeps the same domestic rice-nuruk-yeast DNA but amplifies concentration. The nose adds toasted grain and a touch of ripe melon to the steamed rice base. On the palate, the body is noticeably tighter and more viscous, with grain sweetness that lingers longer and a warming mid-palate that the 7% version lacks. The finish carries a roasted-barley dryness balanced by subtle lactic tang. Serve at 10-12°C. Pairs with doenjang-samgyeopsal where the extra body matches the fermented bean paste intensity, or charcoal-grilled deodeok root for earthy harmony.
