The flagship of Dokkaebi Brewery (agricultural corporation) in Danyang, Chungcheongbuk-do, this 11% expression won first place at the 2019 Korea Traditional Liquor Festival — a clear signal of mastery. Rice, koji, and yeast create an aroma of roasted chestnut, warm grain porridge, and a gentle yeast-bread note. On the palate, the body is medium-full with an elegant grain sweetness supported by a fine acidic backbone that prevents heaviness. The finish is long and warming, with a subtle walnut-skin bitterness that adds sophistication. Serve at 10-14°C. Pairs exceptionally with Korean beef bulgogi where the umami resonance is deep, or duck-breast gui where the 11% warmth cuts through rendered fat.
