Chusa40 is a 40% ABV apple distillate from Chungcheongnam-do that earned the 2019 Korea Traditional Liquor Awards Grand Prize in the distilled spirits category — a distinction that reflects its refined execution. The spirit distills the region's apples into a crisp, focused expression where fruit clarity replaces the sweetness one might expect. The nose is immediate and clean: fresh apple skin, a faint blossom note, and the subtle warmth of well-integrated alcohol. There is no cloying fruit candy quality — the distillation has stripped the sugar and preserved the essence. On the palate, the body is medium with a dry, precise texture. The apple character reads as tart and mineral rather than sweet, closer to biting into a firm green apple than eating apple jam. A brief toasted grain note from the production process adds a whisper of complexity in the mid-palate. The finish is moderately long with a dry, clean close and lingering apple skin brightness. The brewery's 2014 Find-a-Brewery designation adds craft credibility. At 500ml, serve neat at room temperature to appreciate the distillation clarity, alongside raw fish where the apple acidity mirrors citrus, or with galbi where the dry profile cleanses rich flavors.
