Sulgongbang 9.0 Makgeolli from Arirang Brewery in Chungcheongnam-do uses a dual-starter system — domestic rice-based kuk and wheat nuruk — that broadens the grain complexity beyond what either starter achieves alone. The rice kuk contributes a clean, enzyme-driven sweetness, while the wheat nuruk adds a slightly musky, breadlike fermentation character. At 9% ABV, the body sits in the mid-weight range with a texture that coats the tongue but releases cleanly. The aroma is warm grain with a faint sourdough note and a whisper of ripe pear. On the palate, the sweetness is well-distributed — it does not spike early and fade but rather maintains a steady presence through the mid-palate before a dry-ish finish pulls it back.
