Korean Makgeolli

Sulgongbang 9.0 Makgeolli

술공방 9.0 막걸리

Sulgongbang 9.0 Makgeolli from Arirang Brewery in Chungcheongnam-do uses a dual-starter system — domestic rice-based kuk and wheat nuruk — that broadens the grain complexity beyond what either starter achieves alone. The rice kuk contributes a clean, enzyme-driven sweetness, while the wheat nuruk adds a slightly musky, breadlike fermentation character. At 9% ABV, the body sits in the mid-weight range with a texture that coats the tongue but releases cleanly. The aroma is warm grain with a faint sourdough note and a whisper of ripe pear. On the palate, the sweetness is well-distributed — it does not spike early and fade but rather maintains a steady presence through the mid-palate before a dry-ish finish pulls it back. This even-keeled profile makes it highly versatile at the table. It handles fermented side dishes like kkakdugi and baechu-kimchi without clashing, stands up to the robust soy flavors in braised dishes like jangjorim, and refreshes the palate between bites of crispy Korean fried chicken. The 500ml format encourages solo or two-person consumption — small enough to finish before the live cultures shift the flavor.
