Songiju is a 13% ABV cheongju from Naeguk Brewing in Chungcheongnam-do, distinguished by the addition of songi (pine mushroom) concentrate to a base of domestic rice, nuruk, and purified water. Pine mushroom is one of Korea's most prized wild ingredients, and its concentrated form here delivers a savory, woodland-floor aroma that transforms a standard clear rice wine into something genuinely contemplative. The nose opens with damp autumn forest and dried pine mushroom, followed by clean grain underneath. On the palate, the body is medium-light and polished, with an umami undercurrent that appears in the midpalate — not heavy or broth-like, but a gentle savory whisper that extends the finish. The 375ml bottle at a moderate 13% makes it ideal for focused pairing. Serve at 10-12°C alongside beoseot-jeongol (mushroom hot pot) for a mushroom-on-mushroom resonance, or with grilled gwangeo (halibut) where the fish's firm sweetness meets the drink's umami quietly.
