Hwaju is a 25% ABV rice soju from Chungcheongnam-do that blends Korean rice spirit with red ginseng concentrate. Red ginseng (hongsam) is one of Korea's most prized medicinal ingredients — slow-steamed and dried to concentrate its bioactive compounds and deepen its flavor. Here it transforms a standard rice soju into something more complex and culturally specific. The nose opens with warm rice distillate overlaid by red ginseng's distinctive earthy-sweet aroma — woody, slightly bitter, with a honeyed medicinal quality. On the palate, the body is medium with a smooth texture that carries both rice softness and ginseng warmth. The rice provides a clean, gentle base while the red ginseng concentrate introduces layers: an initial earthy bitterness, followed by a warm, almost spicy sweetness, and a persistent woody depth. The ginseng character is assertive but not overwhelming — concentrated enough to define the spirit without turning it into a medicinal preparation. The 25% strength keeps the combination approachable. The finish is moderately long, with red ginseng warmth persisting alongside a clean rice backbone and a slightly bitter, dry tail. The 375ml bottle bridges tradition and daily drinking. Serve at room temperature or slightly warmed, alongside rich Korean soups like samgyetang, grilled meats, or root-vegetable banchan where the ginseng character adds dimension.
