
산내울 오미자주
Sannaeul Omijaju is a 16% ABV cheongju from Chungcheongnam-do that places omija (schisandra berry) at the center of its flavor identity, supported by sugar, neutral spirit, purified water, and fructose. Omija's defining characteristic is its simultaneous expression of five distinct flavors — sweet, sour, salty, bitter, and pungent — a property recognized in Korean traditional medicine and documented in classical herbal texts. In this cheongju, the omija's five-flavor complexity interacts with the residual sweetness from the added sugars, creating a profile that shifts on the palate from initial bright tartness through a brief salty-bitter phase to a sweet, warming finish. Selected as a 2014 Visiting Brewery, the producer demonstrates the Chungcheongnam-do region's engagement with traditional botanical ingredients in refined, clear-filtered expressions rather than the more rustic makgeolli or takju formats.
