Samhae Soju is a 45% ABV spirit from Seoul, rooted in the historic samhae brewing tradition that dates back centuries. Made from non-glutinous rice, glutinous rice, and nuruk, this soju represents one of Korea's most culturally significant brewing methods — a three-stage fermentation process (sam-hae meaning 'three times') where rice and nuruk are added in three successive stages, building complexity through layered fermentation. The nose is deep and layered — warm toasted rice, a rich nuruk-derived aroma with hints of dried flowers and fermented grain, and a subtle honeyed sweetness. On the palate, the body is medium-full with a smooth, viscous texture that speaks to careful distillation. The dual-rice base creates a distinctive grain profile: non-glutinous rice provides clean structure while glutinous rice adds roundness and sweetness. The nuruk's contribution is unmistakable — a complex, almost cheese-like umami depth that separates this from modern soju entirely.
