Persimmongeurin Special is a 12% ABV persimmon fruit wine from Cheongdo Persimmon Wine Brewery in Gyeongsangbuk-do, made exclusively from Korean-grown persimmons. This is the fuller, more expressive sibling in the Persimmongeurin lineup, with 2% higher alcohol than the ice-wine version adding noticeable body and warmth. The nose offers layered persimmon sweetness — ripe Hachiya-like fruit, dried fig, a touch of cinnamon bark, and subtle tannin from the skin. On the palate, the body is medium with a rounder, more substantial mouthfeel than the lighter expressions. The persimmon's natural tannins interact with the sweetness to create a gentle structural tension, giving the wine shape beyond simple fruit-and-sugar. The midpalate reveals a toasted, almost nutty nuance, and the finish is moderately long with a warm, drying resolution. The 750ml format is built for shared dining, where the wine can develop in the glass over a longer meal. Cheongdo's persimmon terroir — warm days and cool nights that slowly ripen the fruit — comes through clearly. Serve at 10-13°C with aged gouda or manchego where the tannic interplay becomes interesting, alongside roasted chestnut dishes, or with caramel-based desserts where the persimmon's warm-fruit character resonates naturally.
