Miso Ice is a 12% ABV ice-wine-style fruit wine from Doranwon Brewery in Chungcheongbuk-do, crafted from grapes with yeast fermentation and antioxidant stabilization. The ice-wine approach concentrates the grape sugars, producing a richly sweet yet layered profile that goes beyond simple confectionery sweetness. The nose opens with ripe grape and a candied fruit intensity, followed by a subtle yeasty complexity underneath. On the palate, the body is medium with a softly rounded, almost syrupy texture that coats without overwhelming. The grape sweetness is generous but anchored by a clean acidic spine that prevents cloying heaviness. The finish is smooth and moderately long, with lingering grape warmth. The 375ml bottle is perfectly sized for sharing between two at dessert. Serve well-chilled at 5-8°C with creamy brie or camembert where the concentrated sweetness meets fat in satisfying contrast, or alongside fruit tarts and panna cotta where the wine's richness echoes without redundancy.
