The standard expression from Gwangyang Brewery in Jeollanam-do uses the same dual-starter setup (ipguk and traditional nuruk) as the Gold edition but aims for a lighter, more everyday drinking profile at 5% ABV. The fermentation character is gentle: soft rice aroma with a quiet lactic undertone rather than bold funk. On the palate, the body is medium-light with creamy sweetness that stays in the background, letting the grain character speak. The finish is tidy and relatively short, clearing quickly to make room for the next bite. Refined enzymes and lactic acid smooth out any rough edges, producing a consistency that works across different meals and moods. This is the kind of makgeolli designed to disappear into a meal rather than dominate it — a reliable workhorse for Korean home cooking. Serve at 5-7°C.
