Dal (Moon) is a 12% ABV makgeolli from Chungcheongnam-do, crafted by Starlight Pond Brewery using organic glutinous rice from Hongdong village in Hongseong-gun, Korean wheat nuruk, and ambansu (bedrock spring water). Every ingredient carries provenance: the organic glutinous rice provides a denser, sweeter grain base than standard rice; domestic wheat nuruk introduces complex fermentation flavors that enzyme-based starters cannot replicate; and the mineral-rich spring water adds a subtle structural backbone. At 480ml and 12%, this is a premium-positioned makgeolli that rewards careful attention — the texture is creamy yet structured, with a sweetness that feels earned rather than added.
