Description

Yosae Rose is a 6.4% ABV sparkling fruit wine from Dancing Side Company Brewery in Chungcheongbuk-do, built on Korean apple juice with omija (magnolia berry) and raspberry tea layered on top. The triple-ingredient approach creates a flavor profile far more nuanced than typical single-fruit sparkling wines. The nose is vibrant and aromatic — fresh apple, tangy omija, and a sweet-floral raspberry tea note interweave into a vivid pink bouquet. On the palate, the body is light and effervescent, with the carbonation (added as CO2 gas) creating a lively, celebratory texture. The apple base provides clean sweetness, the omija contributes its signature sweet-tart complexity, and the raspberry tea adds aromatic depth and a gentle floral undertone. The finish is short and refreshing, with crisp fruit and a pleasant tang. The use of citric acid as an acidity regulator and potassium metabisulfite as antioxidant ensures clean, stable flavor. Serve well-chilled at 4-7°C at brunch gatherings where the pink sparkle sets a mood, alongside soft cheeses and fruit, with light dessert courses, or as a festive aperitif for celebrations.
