Dancing Papa is a 15% ABV sparkling fruit wine from Chungcheongbuk-do, pressed from Korean apple juice with malic acid, carbon dioxide, and yeast. The apple juice drives the character - ripe orchard aromatics with a lively effervescence that keeps each sip energetic despite the substantial proof. Malic acid maintains structural freshness, so the wine avoids syrupy heaviness and finishes with a tart, clean snap. It pairs polished with soft cheeses, light starters, and fruit-forward desserts where its crisp acidity can cut through richness.
