Ye Wheat Wine Red Dry is the drier counterpart in the Ye-mil lineup, a 13% ABV fruit wine from Gangwon-do using Campbell Early grapes but with reduced residual sugar and a slightly higher alcohol frame. The shift from sweet to dry reveals a different side of the Campbell varietal — the foxy grape aroma remains, but without sugar softening, the structure underneath becomes visible. The nose shows dark berry, a touch of dried cherry, and a subtle leathery note. On the palate, the body is medium with more grip than the sweet version. The acidity is more pronounced, the tannin firmer, and the midpalate shows a savory inflection that the sweet bottling lacks entirely. The finish is moderately long and clean, with a drying grape-skin astringency. Winner of the 2019 Korea Liquor Awards Grand Prize in the Korean wine category — a top-tier recognition. Serve at 12-15°C with cheese where the acidity and tannin find structure in fat, alongside light savory dishes where the dry profile acts as a food wine, or with dark chocolate where the dried-cherry note and bitterness create harmony.
