Raikopen Tomato Wine is a 12% ABV fruit wine from Gyeongsangbuk-do made with domestically grown tomatoes, placing it in a rare category of savory-leaning fruit wines that depart from the sweet berry or stone-fruit profiles dominating Korean fruit wine production. Tomato fermentation produces a distinct flavor chemistry: the fruit's natural glutamic acid contributes umami depth, while its lycopene content - the compound responsible for the red color and the product name (raikopen = lycopene) - provides antioxidant associations that Korean consumers increasingly value. The wine's character falls between a dry rose and a gazpacho-like savory beverage, with tomato's natural acidity (citric and malic) providing structure similar to a high-acid white wine.
