Description
Haechang Makgeolli 9do comes from Haechang Distillery in Jeollanam-do, a brewery designated as a 2014 'Visiting Brewery' (Chajaganeun Yangjojang) - a government-recognized program that highlights breweries worth traveling to. The recipe uses fresh new-crop rice (haepssal) and glutinous rice with nuruk and water, and the 9% ABV places it in the mid-strength range where the body has real substance without the heaviness of 12-15% bottles. The glutinous rice adds a distinctive chewiness and a richer mouthfeel than regular rice alone, with a subtle stickiness that clings to the palate. The aroma is warm steamed rice with a honeyed grain undertone, and the first sip delivers a plush, dense sweetness that spreads slowly across the tongue. The finish is medium-length with a gentle lactic tang that cleans up the residual sweetness. The 900ml bottle is slightly larger than standard, suited for sharing at a table with multiple dishes. Pair with haemul pajeon - the seafood oil needs a drink with enough body to match - or with grilled eels from Jeollanam-do's coast where the sweet glaze mirrors the makgeolli's grain sweetness. It also stands up to fiery gochujang-based jjigae without getting overwhelmed.
