
해창 생막걸리
Haechang Fresh Makgeolli is a 12% ABV draft makgeolli from Jeollanam-do, brewed with 15.3% domestic chamssal (glutinous rice), non-glutinous rice, ipguk (cultured rice koji), and wheat-based nuruk. The combination of glutinous and non-glutinous rice creates a denser, more layered grain profile than single-rice makgeolli — the chamssal adds sticky sweetness and body while mepssal provides cleaner structure. At 900ml and 12%, this is a robust, full-bodied makgeolli meant for pairing with strongly flavored Korean food rather than light sipping. The dual fermentation starters (ipguk and nuruk) build aromatic complexity that enzyme-only methods cannot achieve.
