천안연미주
Cheonan Yeonmiju is a 13% ABV yakju from Ipjang Brewery in Chungcheongnam-do, brewed with domestic rice alone — no supplementary botanicals, no fruit additions, just rice, nuruk, and water in a composition that demands flawless fermentation technique. The nose is quietly elegant: polished white rice with a whisper of pear and a faint lactic edge from the nuruk. On the palate, the body is medium-light with a notably smooth, almost gliding texture that makes the 375ml bottle disappear quickly. There is no single dramatic flavor note — instead, a steady, composed arc of grain sweetness moves through a gentle acidity toward a clean, defined finish. The restraint is the point. Winner of the 2011 Korea Our Liquor Awards Top Excellence, followed by a 2012 Encouragement Award, and continued recognition at the 2014 competition — a consistent record that speaks to reliable craft rather than one-off luck. Serve at 10-13°C with hoe where the wine's transparency lets delicate fish flavors lead, alongside banchan-heavy spreads where its neutrality provides a calm center, or with grilled meats where the smooth body absorbs rendered fat without losing definition.
