Boksun Doga in Ulsan — a brewery that earned 'Chajaganeun Yangjojang' (Visiting Brewery) status in 2018 — produces this gentle 10% yakju from domestic rice and wheat-based koji. The lower ABV and koji fermentation (rather than traditional nuruk) create a profile that is exceptionally mild: the nose carries steamed rice with a faint yogurt tang, and the palate unfolds with the texture of diluted silk — thin but not watery, with a fine lactic acidity that keeps it lively. There is a subtle sweetness midway, like rice pudding before sugar is added, and the finish is brief and refreshing. At this gentle strength, it is one of the most approachable Korean yakju for newcomers. Serve well chilled at 5-8°C with dubu-kimchi (tofu with stir-fried kimchi), where the tofu's blandness and the kimchi's funk both find a soft middle ground, or with gyeran-mari (rolled egg omelet) for a light, easygoing match.
