Jadu Wine (Plum Wine) is a 12% ABV fruit wine from Gyeongsangbuk-do, made with domestically grown Korean plums - specifically the firm, aromatic stone-fruit varieties cultivated in the province's orchards. Korean plums differ from Japanese ume in that they tend toward juicier flesh and brighter acidity, which translates into a wine with vivid character. The nose opens with ripe plum, nectarine skin, and a tangy sweetness that immediately signals stone-fruit identity. On the palate, the body is light-medium with a juicy, mouth-filling texture. The plum sweetness is generous and vivid, but a natural tartness runs parallel, keeping the profile lively and preventing the sugar from becoming one-dimensional.
