Hanbi Dongchunghachosul is a 35% ABV soju from Chungcheongbuk-do that infuses Korean rice and nuruk with eleuthero root (gasi-ogapi) and cordyceps (dongchunghachosul), the parasitic fungus that grows on insect larvae and has been prized in East Asian traditional medicine for centuries. Cordyceps brings a distinctive flavor dimension — earthy, slightly funky, with mushroom-like umami depth that is unlike any fruit or herb. The eleuthero root adds woody, slightly bitter bark notes that complement the cordyceps' earthiness without competing with it. The rice and nuruk fermentation base keeps the spirit structurally clean, providing a neutral stage for the two botanicals to express themselves.
